Never Fail Fudge

2 bags semi sweet chocolate chips
1 can eagle brand sweetened milk
1 cup chopped walnuts
1 tsp vanilla

carefully melt the chocolate chips and the milk
together stirring constantly
when melted completely remove from heat and add
the nuts and vanilla
spread into a 9x12 baking pan lined with wax paper
and refrigerate until firm
cut into bite size pieces
store covered in refrigerator.


5 egg yolks
1 egg white
1/2 cup heavy cream
1/8 tsp salt
1/3 cup sugar
1/4 tsp cardamom
about 2 cups flour

Beat eggs well, add sugar and mix well.  Add other
ingrediants to the mixture.  Only use enough flour
so that dough will roll out easily.  Roll out thin, cut
into diamond shapes, cut a slit in the middle, and insert
one point through the whole -- essentially tying
the cookie in a knot.  Deep fat fry until light brown --
about 2-3 minutes, turning when the cookie initially
rises to the top.  Makes 30-40 cookies.
(can sprinkle with powdered sugar if you like.)

Finnish Pancake (Pannu-kakku)

5 eggs
2 cups milk
1 cup flour
1/4 cup butter
1 tsp salt
4 tsp sugar

Beat eggs until very fluffy.  Add milk, flour, salt
and sugar.  Beat thoroughly and place into
10 inch iron skillet in which 1/4 cup butter has been
melted.  Bake in 450 degree oven for 30-35 minutes.
Turn upside down on a plate and spread with
butter and sprinkle with sugar.  This should be
served warm.  For variety, serve spread with
jelly, jam, or marmalade.

Finnish Coffee Bread

2 cups milk, scalded
1/2 cup butter
2 tsp cardamom
1.5 cups sugar
2 packages of yeast
3 eggs, beaten
5-6 cups flour

Scald milk, and add butter, sugar, and cardamom.  Beat
eggs and when milk mixture is cool enough, add to eggs.
Add yeast and flour; knead in what you can't mix in.
Knead until surface is smooth and elastic.  Mold into
two loaves.  Place in greased, glass  bread pans.
Spray top of loaves with cooking spray oil; cover with
a cloth and place in microwave.
Cook on HIGH 1 minute,
let set in microwave 15 minutes, then cook on high 1
more minute, and let set 15 more minutes.  Bake in oven
 at 350 degrees for 35-40 minutes. When done,
remove from pans and place on rack to cool;
brush top with strong coffee,
and sprinkle with granulated sugar!
